TURKEY TIPS!

A 15-pound turkey feeds about 10 people with a bit left over for casserole. A 15-pound turkey will hold about 7 cups of stuffing.

Thaw your turkey in the fridge for about 5 hours per pound or in cold water for about 1 hour per pound (make sure to change your water a few times). If you do nothing else right, make sure you get the darn thing defrosted in time!! I'm speaking from experience *blush*.

To prepare your turkey, remove giblets and neck. Rinse turkey inside and out. Dry skin and cavity well. Fill neck and body with stuffing and pin closed with a skewer (if you have one.

If you're the stove top stuffing type, cut some onions and garlic in half, sprinkle with salt, pepper and thyme (or use fresh thyme sprigs) and stuff the turkey with that just to add a bit of flavour (and make yourself feel like you've actually put some effort into the bird).

Place on a rack in a roaster and rub with butter (1/4 to ½ cup). Sprinkle on poultry seasoning or thyme and salt and pepper.

Cover with roaster lid (if it’s big enough) or make a tinfoil lid. Roast in a preheated 325 degree F oven for about 4 hours. Baste every ½ hour or so if you're the basting type.

Remove the lid (foil) and roast for another hour or until it’s a nice color. A meat thermometer in the thigh should read about 185 degrees F.

Let it stand on a platter for about 15 minutes before you carve.

Cook bacon until almost crisp. Add butter and sauté the onion, carrot and celery for about 6 to 8 minutes. Add the apples, thyme, bay leaves, sage, parsley and cinnamon. Cook for another five minutes and then add the apple juice. Bring to a boil and then take it off the heat and place mixture in a large mixing bowl. Add the walnuts and breadcrumbs. Mix well and season with salt and pepper. Use to stuff turkey, or place in a covered buttered baking dish andbake for about 30 minutes. If you find it is dry, take the juices from the turkey pan.

Maximize your return on renos

The kitchen is the hub. Ever wonder why “kitchen parties” naturally occur very time you have a get-together?

Well, it’s because the kitchen is the hub of every home. Kitchen upgrades can really deliver, with 44 % higher return on investment than the average return on the other popular Renos from adding in a window, skylight or take out the wall to the dining room. Islands with the bar stools, slate or tile to the tops of counters look clean and classy.

2006 as it is!

First of all, we would like to thank all of our clients for their continued patronage and the referred business of your clients, friends and family.

Secondly, we would like to thank all our professional businesses that make it possible to keep us moving forward. From our real-estate teams, lawyers, appraisers and the under writers at the financial institutions where we gainour mortgages from.

Finally we are always asked, “What is the rate going to do in 2007?”
The answer is we can take the information provided by the Canadian Banks and take the articles and news they compile. From there we will make our educated and professional opinions and guide you as best we can. The year has seen astable Prime Rate at 6% and the fixed rates have come down a fair bit. The rates will be steady and holding for most of 2007. Unless, as expected the Prime Rate may fall as low as 5.5%.

Again, all mortgages are set up to meet specific needs and with that comes specific terms. If you have any questions for what should be in place for you please call our office and I will be more then happy to go over the details with you.

Merry Christmas and have a terrific holiday season!
